Letter of Recommendation Motor Yacht Daylami by Arsol Summer Season 2025
To whom it may concern,
It is my pleasure to highly recommend Chef Marco Burel, who worked aboard the motor
yacht Daylami by Arsol during the summer season of 2025.
Throughout his time onboard, Marco consistently demonstrated exceptional
professionalism, creativity, and dedication. His cuisine stood out for the outstanding
quality of ingredients, precision in execution, and beautiful presentation. Among the
several chefs we have had over the years, Marco was by far the best, both in flavor and in
overall performance.
His menus were varied, balanced, and perfectly adapted to the preferences of both guests
and crew. As an example, during the 20–21 September service, he prepared dishes such as
yellow tomato risotto with buffalo stracciatella, Iberian pork secreto with pineapple and
mint chutney, dry-aged beef tartare with umeboshi and honey-mustard sauce, and warm
apple with salted caramel ice cream. Each plate reflected a standard of fine dining
presentation and taste.
Beyond his culinary talent, Marco maintained a consistently positive, discreet, and
cooperative attitude—essential qualities when working aboard a yacht. His kitchen
management was impeccable, ensuring cleanliness, order, and efficiency even under
demanding conditions.
For all these reasons, I wholeheartedly recommend Marco Burel for any chef position,
whether onboard or on land. I am confident that he will bring the same level of excellence,
passion, and professionalism to any future role.

We can wholeheartedly recommend Marco as a private chef — it was an exceptional experience in every way!
We were a group of eight adults, and Marco cooked for us over four days, preparing
breakfast and either lunch or dinner each day. He used only regional and organic products,
and every breakfast was beautifully presented as a buffet, thoughtfully arranged according to
our wishes.
Each lunch and dinner included a starter, a main course, and a dessert. The variety of
dishes completely won us over — we were truly impressed by both the quality of the food
and Marco’s outstanding service.
Among the highlights were his risottos, ranging from classic Italian versions to more creative
interpretations inspired by paella, such as the one with gamba roja de Sóller and the
delicious combination of corvina and octopus. Unforgettable, too, was the Thai fish soup,
enriched with a fresh and aromatic blend of cilantro and lime that perfectly enhanced the
flavors of the sea.
There were also several vegetarian dishes — varied, flavorful, and showcasing the
freshness and quality of local ingredients.
Every course reflected a perfect balance of flavors, textures, and presentation.
Desserts were another highlight — refined, delicate, and always the perfect finale to each
meal.
Marco’s cuisine beautifully blends Italian, Spanish, Asian, and South American influences,
creating a truly unique and memorable culinary experience.
We can wholeheartedly recommend Marco as a private chef — it was an exceptional experience in every way!

Por la presente deseo expresar mi más profunda y entusiasta recomendación para Marcos,
un joven cocinero italiano cuyo trabajo tuve el privilegio de disfrutar en la celebración de mi
60º cumpleaños.
Desde el primer momento, Marcos demostró un nivel de profesionalidad, preparación y
dedicación absolutamente excepcional. A pesar de trabajar en una cocina muy pequeña,
logró crear un menú que superó cualquier expectativa: carne exquisita, pescado exquisito,
ensaladas y entrantes perfectos, bebidas y zumos cuidadosamente elaborados, todo
presentado con una combinación perfecta de elegancia, innovación y exquisitez.
La decoración, completamente a cargo de él, fue impecable y armoniosa. Cada detalle
mostraba un gusto refinado y una sensibilidad extraordinaria.
Uno de los aspectos que más me impresionó fue su capacidad de organización. Llegó
perfectamente preparado, con todo lo necesario, permitiéndome disfrutar de mi celebración
sin preocuparme absolutamente por nada. Además, cumplió de manera ejemplar con el
presupuesto acordado, lo cual demuestra su honestidad y seriedad profesional.
Quisiera destacar también su comportamiento intachable, su limpieza, su presencia
elegante y su manera de explicar y servir cada plato, que hicieron del evento una
experiencia memorable no solo gastronómicamente, sino también humana y estética. Cada
gesto, cada detalle y cada preparación estaban hechos con una pasión y una competencia
que pocas veces se encuentran.
Estoy, sencillamente, deslumbrado por su trabajo.
