Among the exciting new ventures is NÖJE, a bakery that brings the essence of Nordic flavors to the heart of the city. This unique concept is the brainchild of the owner Jona inspired by a trip to Copenhagen, where the taste of freshly baked cardamom rolls ignited the spark to open a bakery that would introduce Nordic traditions to Albania. After experiencing the warmth and simplicity of Scandinavian bakeries, particularly the delight of a perfect cardamom roll, the owner returned to Tirana with a clear vision: to create a bakery that would combine the art of Nordic baking with the charm and culture of Albania.A true celebration of simplicity, quality, and flavors that connect people, NÖJE is poised to become an exciting new addition to Tirana's growing culinary scene. Gianluca and Simone, two skilled bakers with a shared passion for exceptional baked goods, joined the project. Together, we set out to turn a dusty construction site into a welcoming space where the air now smells of golden croissants, freshly baked baguettes, and other irresistible Nordic treats. It’s been a journey of hard work, creativity, and collaboration to make NÖJE a reality—a place that combines the essence of both Nordic and Albanian cultures. Days were spent perfecting recipes, testing dough, and crafting the ideal bread. At the heart of everything we bake at NÖJE is our sourdough base, and we’re proud to use locally sourced butter from Tirana. This mix of Nordic techniques and Albanian ingredients creates a unique flavor that can only be found here. From the light, fluffy Semla Swedish buns to the aromatic cardamom and cinnamon rolls, every creation at NÖJE carries a deep respect for Nordic baking traditions, while embracing the beauty of Albanian ingredients.
